I wanted to give you a heads up before I send this out tomorrow, but first I thought I'd share what we had for supper last evening.

I was busy trying to get the website and the email ready, and just didn't have time to really cook anything in depth. I had one our chickens cut up in the 'fridge and I remembered an old commercial from when I was a little kid. It was for Shake 'n Bake. A crispy coating for chicken that you put in the oven for a fast easy meal.

"Do they even make that anymore", I wondered. Since I mostly have always cooked from scratch (mostly economics, not virtue), I really don't know what kind of stuff like that is available.

Still, these people (my ... family) like to eat most every day, so I needed something... I'd figured I'd make my own shake and bake. I even cajoled my daughter Katie to mix it up and shake the bag. Turned out great, so I'm sending it along in case you might be in a similar situation some time. But I couldn't get my kid to say "It's Shake 'n Bake, and I helped!" Good luck with yours.

In a zipper bag combine:

  • 1 cup unseasoned breadcrumbs
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp dried parsley
  • 2 tsp dried basil
  • 1 tsp salt (fine)
  • 1 tsp paprika

Mix well.

Preheat your oven to 400F, line a rimmed cookie sheet with foil and oil it.

I had Katie hold the bag open as I rubbed oil all over each chicken piece and put them, one at a time, into the bag. Katie shook the bag to coat the pieces and I removed and placed them onto the cookie sheet. When the pieces were all coated and placed, I gently patted a little of the remaining crumb mixture onto the pieces to help fix any light spots.

I used all the pieces from a large chicken and it only took about 45 minutes. At about the halfway point I laid a sheet of foil over the pieces very lightly just to keep things from getting too brown. Use a thermometer if you want to verify doneness the usual 165F I reckon. Not gonna lie, I just eyeballed it.

You also will get first dibs on other stuff we raise throughout the year so you don't miss out when we run out. I also have some special things planned, but I don't want to get ahead of myself.
